Pancake Tuesday Recipe

image

I love pancakes, so what better excuse to have them for breakfast than Shrove Tuesday. Or for the non-religious, Pancake Tuesday. Here’s my go-to plain pancake recipe. It’s a little bit sweet, and fluffs up just a bit. I loved pancakes with lemon juice and sugar as a kid, but generally stick to maple syrup these days. This recipe makes enough for 2.

Ingredients

110g plain (all purpose) flour
15g butter, melted and cooled + extra for pan
150ml milk
1 tablespoon sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons baking powder
pinch of salt

Procedure

1.  Put all ingredients in a blender and mix until combined.

2.  Heat a frypan over medium heat. Add a little butter and tip pan around to coat with butter. Pour in pancake batter into pan in batches. When bubbles appear on surface and the pancakes start to look cooked on top at the edges, flip over and cook for another minute or two.

3.  Serve with your favourite toppings.

If you prefer thicker pancakes, use less milk and/or refrigerate the batter before cooking.

If you are after a different pancake recipe, check out my apple and cinnamon pancakes, my Japanese vegetable pancakes or maybe my corn fritters! Yes, I love pancakes!

What are your favourite pancake toppings?

we love to have pancakes and eggs for dinner once in a while – we call it ‘brinner’ (breakfast for dinner) 🙂

my eldest son is so funny – he doesn’t like syrup, so he tops his w/jelly.

thanks for visiting on my SITS day!
