Cornflake Cookies

Lately, I’ve wanted to cook food from my childhood. I love the idea of baking the same things for my kids that my Mum made for me. These cornflake cookies fit the bill (although my Mum always put sultanas in them – I’m not a fan). I also like to fool myself that homemade cookies are a bit healthier than store-bought.

Just the cookie dough looks delicious!

Ingredients

125g (4 1/2oz) butter, softened and chopped into small cubes
1/2 cup caster sugar
1 egg
1/2 teaspoon vanilla essence
1 cup self-raising flour
2 1/2 cups cornflakes

Method
1.  Pre-heat oven to 180°C (350°F).

2.  Beat the butter and sugar together until light and fluffy (using a stand or handheld mixer) . Add the egg and vanilla and beat well.

3.  Mix the flour into the butter mixture with a wooden spoon. Then mix in the cornflakes.

3.  Grease two baking trays (I used Canola Oil spray.). Drop heaped teaspoon-sized blobs of mixture onto a tray. Leave about an inch between each cookie. I can usually fit 3 rows of 4 cookies on my baking trays.

4.  Bake in the oven for 10-12 minutes, or until golden brown. Cool on the trays for a few minutes (otherwise they’ll break up) before transferring to a wire rack to cool completely.

    My mom used to make a similar recipe when I was a teenager–I still remember how much one girl in my class loved them!
