It’s heading towards the end of the year, and reasons to get backing are coming in thick and fast. School Christmas parties, gifts for friends and neighbours, and just having to feed the kids each day.
But energy levels are dropping, as we head into the festive season. I don’t have the time and energy to spend hours in the kitchen, cooking up a feast (as much as I’d like to). There’s just too much on.
This apricot walnut slice is quick, tasty, and mostly healthy slice to get you through the festive season. Fill up the kids tummies after school, or enjoy a slice with a cup of tea.
Leave out the walnuts, and it’s great for the kids school lunch box too. Don’t tire yourself out, just make this easy recipe.
Apricot Walnut Slice recipe
- 1 3/4 cups all-purpose flour
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 3/4 teaspoon fine sea salt
- 3/4 teaspoon baking soda
- 1 3/4 cups rolled oats
- 1/2 cup dried apricots, chopped into small pieces
- 1 cup coarsely chopped walnuts
- 225g (2 sticks) unsalted butter, melted
- 1 egg
- 1 teaspoon pure vanilla extract
- Preheat the oven to 180°C (350°F).
- Line the bottom and sides of a lamington or slice pan (20cm x 30cm, or 9inch x 13 inch) with baking paper.
- In a small bowl, whisk together the melted butter, egg and vanilla.
- In a large bowl, stir together the flour, sugar, cinnamon, salt and baking soda.
- Add the oats, dried apricots and walnuts to the large bowl and stir to combine.
- Add the butter, egg and vanilla and stir until evenly mixed.
- Pour the mixture into the prepared pan and gently press to flatten. Bake until light golden, about 30 to 35 minutes. Cool in the pan for 1 hour before cutting into bars.
- Store in an airtight container for up to 3 days.
